Soft Baked Cherry Almond Granola Bars

I'm a bar girl.  Just ask any of my friends from college.  Wait.

I mean, I love to EAT a good bar.  Snack bar, protein bar, breakfast bar, energy bar, granola bar....you name it, I'll eat it.  A lot of days, they're breakfast.  When I'm traveling, I always have a stash of bars in my carry-on.

I've always wanted to make them at home, so I did (finally).  I predict this is the first recipe of many to come.  Soft baked with oats, oat flour, almond butter, and dried cherries...these homemade bars were a hit with the whole family.

Breakfast Waffle Cones

Waffle cones for breakfast?  What?!?   Hear me out.

These breakfast waffle cones are filled with yogurt and toppings rather than ice cream.  They make a quick breakfast that is fun  interactive for a sleepover, or perfect for a dash out of the door to school.breakfast waffle cones!  YES, waffle cones for breakfast!

Here's why I love these waffle cones:
  1. Well, I just love any excuse to eat a waffle cone.
  2. They're totally quick and easy for busy mornings.
  3. I love yogurt for lunch or a snack, but for breakfast, I want something I can really sink my teeth into.  Thank you, waffle cone.
  4. Portable. Everyone else on your commute will be having a "I'll have what she's having" moment.
  5. The flavor combination possibilities are endless!

Whether you fill them with fruit and yogurt (like strawberries + strawberry yogurt or blueberries + lemon yogurt)...

...or maybe mix a little peanut butter into Greek yogurt and drizzle with honey...

... or, (I love this one) add chocolate chips and coconut, you're sure to find a favorite.

If you want to get really fancy, wrap a paper doily around the cones (I used heart-shaped ones.)
These were inspired by my friend, Kami.  By all means, if you have a Cricut, make her wrappers...they are DARLING!

One note: serve and eat immediately after filling.  The waffle cones can start to lose their crunch after sitting a bit.

Raspberry Poppy Seed Bread

Quick breads.  Oh, you evil temptresses.

I try *not* to bake quick breads often because I love them so much.  My muffin top should probably be referred to as a "quick bread" top.

Mr. E will tell you, I've had a long standing love affair with Starbucks pumpkin loaf.  He seems ok with it.

Sometimes the call of the quick bread is too strong and it must be answered.  Such is the case today.

This Raspberry Poppy Seed Bread is sweet, moist, studded with crunchy poppy seeds, and tart raspberries.  It's topped off with a simple lemon glaze.

The recipe calls for frozen raspberries, so you can make it all year long.  Also, it makes two loaves.  One for you, one for the neighbors.  Or, two for you.

Let me give you a little hint...I think the bread tastes most delicious when it's been left to sit (wrapped and refrigerated) for a day or two.

Wake up and smell the...Nutella.

I am not a morning person.  I love mornings once I get up and get moving, but actually *getting up?* Not a fan.  Give me my quilts, and pillow, and snuggles, please.

Because I'm a little slow going, easy breakfasts are my friend.  This one is going to be your friend, too.

This baked Nutella oatmeal comes together in a snap, bakes up quickly, and will be sure to start your day off on the right foot...morning person or not.

The recipe also has a secret ingredient...

...no, not this.  I do use this in the recipe, but you can substitute any milk.

The secret ingredient is...

...yep.  Baby Food.  Baby food prunes to be exact. 

Don't be scared.  The prunes keep the baked oatmeal from drying out and they also add sweetness without adding extra sugar.  The sugar in the Nutella is the only sugar in the recipe!

Baked Nutella Oatmeal

1 egg
1/2 cup baby food prunes
1 cup unsweetened vanilla coconut almond milk (or any milk)
1 teaspoon vanilla
1/2 cup Nutella
3 cups rolled oats
1 teaspoon baking powder
3/4 teaspoon kosher salt

Grease a 9"x13" pan.  Preheat oven to 350.

In a large bowl, whisk the wet ingredients together.  Stir in the oats, baking powder and salt.

Pour into the prepared pan.  Smooth into an even layer.

Bake for 20-25 minutes, or until baked through.  Let cool 5 minutes before cutting into squares and serving.

Cover and refrigerate leftovers; reheat in the microwave.

{Feel free to add a few chopped almonds to make the oatmeal prettier.  If you want to be really decadent, drizzle some Nutella over the top.  Mmmm...}

5-Seed Applesauce and Honey Bread...and one honey of a summer day!

If your idea of a good summer day is 95+ degrees, wearing jeans, a long-sleeved shirt, hat, boots, gloves, and a BEE KEEPING SUIT, well, you are in for a treat.

Kiddo and I were lucky enough to take a beekeeping class this summer.  There's nothing more fun to a teenage boy than spending an afternoon with his mom while wearing a ridiculous suit.  Promise.

Actually, we BOTH ended up loving the class.  We learned so much about these amazing little creatures...and came away with a whole new appreciation for them.

Maybe you're like us and don't intend to start beekeeping right now, or maybe you're like my friends Amy and Robyn and are ready to have your own hives.  Either way, take a class if you get a chance.  It's a lot of fun, BEElieve me. ;)

The bread.  I'm a bread girl.  As in, if I had to pick one food to eat for the rest of my life, it would be bread.  This is the perfect bread for breakfast.  It's chock-full of seeds (flax, sunflower, pumpkin, sesame & poppy seeds), studded with chunky almonds, baked with whole wheat flour, and sweetened with applesauce and, you guessed it, honey.

Not too sweet, not too heavy...this bread tastes "healthy" to me...in a good way.  And, healthy in a way that might involve cream cheese frosting.

There are a few options for enjoying it.
  1. Slice, toast, and spread with butter.  This is actually my favorite way.  Buttered toast is my ultimate comfort food.
  2. Slather that baby with some honey cream cheese frosting.
  3. Toast the bread and use the cream cheese frosting as a schmear, like a bagel.

I love, love, love that this recipe makes two loaves.  Enjoy one now, wrap the other, and pop it in the freezer.  When I have breakfasts pre-made and stocked in the freezer, I feel like I'm QUEEN of the WORLD!!!  How about you?!?

    5-Seed Applesauce & Honey Bread
    {makes 2 loaves}

    for the bread:
    1/4 cup unsalted sunflower seeds
    1/4 cup raw pumpkin seeds
    1 TBSP flax seeds
    1 TBSP sesame seeds
    1 TBSP poppy seeds
    1/2 cup blanched whole almonds, roughly chopped
    3 cups white whole wheat flour
    1 TBSP baking powder
    1/2 teaspoon baking soda
    1/2 teaspoon kosher salt
    2 teaspoons cinnamon
    1/4 teaspoon cloves
    3/4 cup canola or vegetable oil
    3/4 cup unsweetened applesauce
    4 eggs
    1 cup honey
    1 teaspoon vanilla
    3/4 cup buttermilk

    for the honey cream cheese frosting/schmear (optional):
    8 oz. cream cheese, room temperature
    1/4 cup salted butter, room temperature
    1/4 cup honey
    1 teaspoon vanilla
    1 & 2/3 cup powdered sugar

    Preheat oven to 325.  Grease two 8" loaf pans; set aside.

    Roughly chop the sunflower, pumpkin and flax seeds. (You can also use a coffee grinder to pulse the flax to crack the seeds.)  Place in a large bowl.

    Add the chopped almonds, flour, baking soda, baking powder, salt, cinnamon and cloves.  Stir together and set aside.

    In another large bowl, whisk the oil and applesauce together until combined.  Add the eggs one at a time, whisking each well.  Whisk in the honey and vanilla.  Finally, whisk in the buttermilk.

    {I typically use local Texas honey, but I used this organic honey from Wholesome Sweeteners for this recipe.  It was rich and flavorful...and just perfect for this bread. Not an ad, just good stuff.}

    Stir the dry mixture into the wet, stirring just until the dry ingredients are fully incorporated.  Divide evenly between the two prepared loaf pans.

    Bake for 40-50 minutes, or until a toothpick inserted in the middle comes out clean.  Let cool in the pan for 10 minutes, then remove from the pans and place on a wire cooling rack to cool completely.

    For the honey cream cheese frosting:
    Beat the cream cheese and butter until completely combined and fluffy, about 3 minutes.  Add in the honey and vanilla.  Beat together, scraping down the bottom and sides of the bowl as needed.  Gradually add in the powdered sugar.  Chill.

    Spread onto the top of the bread, or place in a bowl to be used as a topping for toasted bread.

    Triple Play Back-to-School Mini Muffins

    School starts for kiddo next week.  HIGH SCHOOL, but I will cry on your shoulder(s) about that in a different post.

    This year?  His carpool is meeting at 6:50am.  SIX...I don't care that it's 10 minutes until 7:00am...it's still in the sixes.

    Anyway, my mind naturally went to breakfast.  (Does your mind work that way, too?)  What will I make for breakfast that will allow *me* to sleep as late as possible, but also get him out of the door on time?

    The answer...these Peanut-Butter Oatmeal Mini Muffins.  I'm calling them "Triple Play" muffins because they'll be just the ticket for breakfast, tucked into a lunchbox, or for an after-school snack.

    They start with cooked oatmeal.  To that, you add all kinds of good stuff like peanut butter, brown sugar, and melted butter.

    (Mental note #2: someone needs to dust off those plastic cherries.)

    And, by my rough calculations, they come to approximately 62 calories a piece...so, feel free to eat several at one sitting.

    Desserts for Dudes: Bacon-Banana Pancakes with Buttery Bourbon Maple Syrup

    You can bring home the bacon, 
    Fry it up in a pan,
    And then add it to some pancake batter,
    Just because you can...

    {If you are younger than 30, please ignore the above. Thirty and up? I expect you to be strutting through the house holding a frying pan and spritzing perfume right now.}

    OK...so these are not "dessert," but we're using the term loosely here.

    MAKE THESE for your hubby or dad this Father's Day.  
    I'M NOT KIDDING.

    Bacon-Banana Pancakes with Buttery Bourbon Maple Syrup
    Bananas, bacon, bourbon, maple syrup?  Total dude pancakes.
    (In case you're wondering, I may have eaten four after taking the pictures. With extra syrup.)

    Bacon-Banana Pancakes with Buttery Bourbon Maple Syrup
    yield: 12 pancakes

    for the pancakes:

    8 slices bacon
    1 egg
    1 cup mashed, ripe banana
    2 TBSP packed light brown sugar
    1 cup all-purpose flour
    3 teaspoons baking powder
    1/4 teaspoon salt
    1 cup milk
    1/2 teaspoon vanilla
    2 TBSP bacon grease

    for the syrup:

    1/2 cup pure maple syrup
    1 TBSP bourbon
    1 TBSP salted butter

    Fry the bacon in a skillet until crispy. Remove to a paper towel-lined plate. Reserve 2 tablespoons bacon grease for the pancakes. Once cool enough to handle, break the bacon into pieces.

    In a large bowl, whisk the egg for one minute.  Add in all of the remaining pancake ingredients, whisking until just combined. Allow the batter to sit for several minutes to help the flour to absorb into the liquid without over-whisking.

    Heat a non-stick griddle to 350 degrees, or heat a skillet on the stove and coat with butter. Ladle 1/4-cup size scoops of batter onto the griddle. Place a few pieces of bacon onto the top of each poured pancake.

    Let the pancakes cook for a few minutes on each side, until done.

    Meanwhile, heat the maple syrup, bourbon, and butter in a saucepan over low heat.

    Serve the pancakes with butter and the warm bourbon syrup.
